Peanut Butter Muffins

Peanuts are auspicious for Chinese New Year. It symbolizes vitality, longevity, riches and honor. It's a popular snack for Chinese New Year served unshelled. Peanut butter cookies are also very popular during this festive season but since I am hopeless at making cookies, I thought why not make these super easy keto peanut butter muffins which tastes like the real deal - soft, moist, aromatic and delicious.

1.  For best results, weigh the ingredients with a digital scale

2.  Preheat the oven at 350F or 180C.

3.  In a bowl, add cream, eggs and butter and whisk until well combined.

4.  Add peanut butter and whisk until well combined.

5.  Add all dry ingredients and mix with spatula until smooth.

6.  Adjust taste accordingly.

7.  Spoon mixture into muffin cups up to 1/2 or 3/4 full to allow space for the muffins to rise.

8.  Bake at the middle rack for about 20 to 30 mins or until a wooden skewer comes out clean.

Baking powder = 8 g / 2 tsp

Baking soda = 4 g / 1 tsp

Salt = 4 g / 1 tsp

Monk fruit = 1/2 to 3/4 cup (OR any keto friendly sweetener)

WET INGREDIENTS

Whipping cream or yogurt = 330 g / 1 cup + 4 tbsp

Unsalted Melted butter = 60 g / 1/4 cup
