Nutty Chocolate Coconut Balls

Traditional chocolate coconut balls are made of just 3 ingredients i.e. chocolate, shredded coconut and condense milk. I could make a low carb version of this in the future but for now, I thought it would be more delicious to make a nutty version because most of us love some crunch. This Nutty Chocolate Coconut Balls are super easy to make, and they are great as a healthy snack, dessert or even as gifts. They have a perfect combo of soft chocolate filling, crunchy nuts and chewy coconut - incredibly delicious!

DIRECTIONS

1.  For best results, weigh the ingredients using a digital scale.

2.  In a bowl, add all the dry ingredients and mix well to combine.

3.  Add all the wet ingredients and mix until a thick crumbly dough is formed.

4.  Use a cookie scoop or measuring spoon to ensure consistency. Roll into a ball then place on a baking tray lined with parchment paper. Wet your hands with water or grease for easier handling.

5. Coat all the balls generously with desiccated or shredded coconut.

6. This recipe yields about 26 balls at 20 g each.

7. Chill in the fridge for about 1 hour to firm up the texture a bit. You can also freeze for a shorter time.

DRY INGREDIENTS

Roasted walnuts = 120 g (1 cup) (chopped coarsely)

Roasted almonds = 70 g (1/2 cup) (chopped coarsely)

Unsweetened desiccated or shredded coconut = 40 g (1/2 cup)

Unsweetened cocoa powder = 12 g (1 1/2 tbsp)

Ground golden flaxseeds = 21 g (3 tbsp)

Salt = 3/4 to 1 tsp (I used 3/4 tsp but would have preferred 1 tsp for a slightly saltier taste)

WET INGREDIENTS

Unsweetened smooth peanut butter = 190 g (3/4 cup)

Room temperature water = 45 ml (3 tbsp)

FOR COATING

Unsweetened desiccated or shredded coconut = 40 g

Notes:

1. You can choose to use any nuts or seeds.

2. It is important to roast the nuts and seeds until really fragrant and crunchy as this is a no-bake recipe.

3. It is important to chop the nuts and seeds coarsely after roasting so that they are crunchy. If you processed them finely, they would not taste crunchy.

4. It is good to toast the desiccated or shredded coconut before adding into the dry ingredients as it will make the coconut more fragrant.  

5. Instead of peanut butter, you can use almond butter, tahini or sunflower seed butter.

6. These balls have a subtle coconut flavor so if you prefer a stronger aroma, just add some coconut extract.
