No mess sandwich with 90 seconds keto bread

Single or small serving recipes using mostly microwave ovens are super simple, quick and delicious. They are so convenient for individuals who live alone or those who are the only ones living low carb or keto in the family. They are also great for portion control or to satisfy any last-minute cravings without worrying about leftovers.

1.  For best results, weigh the ingredients with a digital scale

2.  The recipe for this bread is version no. 2 from my 90-second keto bread video (link here -https://youtu.be/3nUwLeK_48U). You can also use any of the other versions or even any regular keto bread to make this wrapped sandwich.

3.  Add the dry ingredients into a bowl and mix to combine.

4.  Add the wet ingredients and mix until well combined.

5.  Transfer the dough into a 5-inch square baking dish that is microwave safe and line with parchment paper.

6.  Spread evenly.

7.  Microwave for 90 seconds. It is done when the top feels firm. As not all microwaves are the same, you may need to adjust the timing accordingly. If you prefer to use the oven, you can bake it for about 9 to 10 minutes at 350 F or 180 C. However, I find that the texture is very different as it turns out heavier, denser and flatter unlike the ones using microwaves which are light, soft and fluffy. I believe it's the difference in the cooking method so I would highly recommend using a microwave for such recipes.

8.  Remove bread and parchment paper. Let it cool slightly before slicing.

9.  Slice equally into half.

10.  For the filling ingredients, you can of course use your preferred fillings. In the video, I used the following fillings;

1 fried egg

1 slice cheese

2 pieces of deli ham

3 pieces of romaine lettuce

1 piece of tomato

11.  Assemble the sandwich then place it in the middle of a parchment paper (cut into 15 1/2-inch length x 11-inch width. Fold both long ends together and tuck the excess paper at the short ends into the bottom of the sandwich. Use a sharp knife and cut the wrapped sandwich into half. You can place the sandwich into a zip lock bag as an on-the-go sandwich or enjoy it immediately without any mess.

INGREDIENTS FOR BREAD

Almond flour = 50 g (8 1/2 tbsp)

Baking powder = 4 g (1 tsp)

Whole psyllium husks = 5 g (1/2 tbsp) (Ground until half its original volume then weigh it)

Fresh egg whites = 1 large (37 g)

Hot or boiling water = 60 ml (1/4 cup or 4 tbsp)

NOTE: If you prefer a nut free version, you can replace the almond flour with sunflower seeds (ground or powdered) at the same ratio. However, if there's any color reaction then you may need to add a bit of apple cider vinegar to counter it.

Wholegrain mustard = 2 tsp

Dijon mustard = 2 tsp

Fresh lemon juice = 1 to 2 tsp

Stevia liquid = a few drops (optional)

Sriracha or hot sauce = 1 to 2 tsp (optional)

(Note: Mix all ingredients together in a bowl. You can of course, use your own preferred sauce)
