Fried Rice with Bacon

Growing up, fried rice has been a staple in our household and my late mum can easily whip this up in minutes. It is cheap as we can literally use any leftover ingredients and rice to make this yummy one pan dish. Fortunately, we do not have to be deprived of fried rice while living low carb. Konjac or shirataki rice has been my savior and today, I will show you how to make a low carb version of fried rice. Of course, you can also use cauliflower rice if you prefer. This recipe is one of the 60 recipes from my cookbook. 1. Prepare the konjac rice by rinsing and draining then pan fry in a pan without oil until squeaky. This step is important to remove the excess water content then only the rice can absorb all the flavors. When the water is not visible anymore on the pan, remove from heat and set aside.

2. Add all the seasonings into a small bowl, mix well and set aside.

3. To make the scrambles eggs, heat up the frying pan with 2 tbsp of cooking oil over medium heat. Add the eggs (beaten with a fork) and scramble until cooked. Remove from heat and set aside.

4. To make the fried rice, heat up the same frying pan with 2 tbsp of cooking oil over medium heat. Add the bacon and sauté until golden brown then add the garlic, spring onions, red chilies and stir fry until fragrant. Then add the rice, seasonings and mix well. Adjust taste accordingly. Add the scrambled eggs (prepared earlier) and mix well. Finally, drizzle the sesame oil at the side of the pan then mix well. This will make the fried rice so much more flavorful.

5. Transfer onto a serving plate and garnish with chopped spring onions.

Ingredients

INGREDIENTS

1 packet of Konjac Rice (You can also use cauliflower rice)

1 strip streaky or thick cut bacon (Or any meat or seafood of your choice)

2 cloves garlic (minced)

1/2 fresh red chili (De-seeded and chopped. This is only for color so you can also use bell peppers.)

2 whole large eggs

¼ cup chopped spring onions (preferably the white part)

4 tbsp cooking oil (I used coconut oil, but you can also use any keto friendly oil)

1 tsp sesame oil

SEASONINGS

1 tbsp tamari, liquid amino or soy sauce

½ to 1 tsp dark soy sauce (for color only so it's optional)

½ tsp salt

A pinch of white pepper

1 tbsp monk fruit (optional)

GARNISHING

Chopped spring onions
