Fat Bombs

This is the first time that I am making keto fat bombs. Fat bombs are also known as energy balls as they give us an energy boost. They also make us feel satiated and at the same time, curb cravings. Fat bombs are basically sugar free treats that are made from healthy fats such as cream cheese, nut butter or coconut oil.

1.  In a bowl, add all the dry ingredients and mix to combine.

2.  Then add all the wet ingredients and mix until a thick dough is formed.

3.  Use a cookie scoop and shape into balls. It's important to grease your hands to help with the shaping of the balls. Place the balls on a baking tray lined with parchment paper. This recipe makes about 21 fat bombs.

4.  You can choose to enjoy these fat bombs as they are, or you can coat them with a layer of chocolate ganache which takes them to another layer of deliciousness.

5.  Chill them while making the chocolate ganache.

6.  Microwave the chopped dark chocolate for 1 to 1 1/2 minutes at a 30-second interval. Stir and microwave again just until the chocolate is completely melted. Let it cool for a while before using.

7.  Coat the balls with the melted chocolate and place them back on the baking tray.

8.  Chill in the fridge for a few hours until set. The longer they are chilled, the firmer and crunchier they become. I like to freeze them as they set very quickly and become a lot firmer and crunchier.

9.  As an option, wrap them individually with a candy or chocolate wrapper for mess-free eating and convenient storage.

10. These fat bombs can be chilled or frozen for months.

DRY INGREDIENTS

Roasted pecans = 100 g (1 cup)

Roasted almonds = 70 g (1/2 cup)

(Note: You can use any nuts of your choice. However, the key is to roast these nuts until really fragrant and crunchy then chop them up into big chunks)

Allulose powdered sweetener = 60 g (1/2 cup) (OR any keto friendly powdered sweetener)

Golden flaxseeds = 14 g (2 tbsp) (Meal or ground. You can also use chia seeds)

Salt = 1/8 tsp

WET INGREDIENTS

Smooth peanut butter = 150 g (1/2 cup + 2 tbsp) (I used natural peanut butter without added sugar and salt. You can also use almond butter. For a nut free option, you can use tahini or sunflower seed butter)

Room temperature water = 30 ml (2 tbsp) (OR any keto friendly milk)

CHOCOLATE GANACHE

Dark chocolate chip or bar = 120 g (3/4 cup) (I used a 90% dark chocolate bar and chop them up so that it melts faster. I did not choose to use sweetened ones as the balls are small and it's only a thin layer of coating, so the slight bitterness is totally fine. But feel free to use sweetened ones, if you prefer)
