DIRECTIONS

1.  Prepare the fruits first by placing them into a square silicone jelly mold. Set aside.

2.  In a pot, add 500 ml of coconut or plain water, agar agar powder, sweetener and whisk to combine.

3.  Turn on the heat to medium high and whisk constantly. Bring to a boil and cook until the agar agar powder and sweetener are dissolved.

4.  Turn off the heat and add another 500 ml coconut or plain water and whisk to combine. This is to reduce the temperature so that the agar mixture will not cook the fruits and make them mushy.

5.  Pour the agar mixture into the jelly mold with fruits. This recipe makes about 30 jelly cubes.

6.  Stir the fruits to ensure they do not stick to the bottom or float on the surface.

7.  Chill in the fridge for at least an hour until set then remove the jelly from the mold. You can chill the jellies further to enjoy them really cold.
