Coconut Bagels

1. For best results, weigh the ingredients with a digital scale

2. Pre-heat oven to 350F or 180C.

3. Mix all the dry ingredients in a bowl with a spatula until well combined and no lumps.

4. Add all wet ingredients (except boiling water) and mix until well combined.

5. Add boiling water and mix until it becomes a dough which is quite soft but manageable.

6. Divide the dough into 8 balls of 100g each so that the bagels are of the same size.

7. There are 3 ways to shape the dough into a ring;

Option 1 = Use a donut or bagel mold to cut into ring shape.

Option 2 = Flatten the ball slightly then use your finger to make a hole at the center.

Option 3 = Roll the dough into a log (about 6" long) then bend it to make a ring and seal the edges by pinching the dough together.

8. Place the shaped doughs on a baking tray lined with parchment paper.

9. Brush the top with egg yolks. Now the secret to make the bagels look golden is to refrigerate the dough for 5 mins after the first brushing with egg yolks. Then remove and brush with the second layer of egg yolks and sprinkle generously with Everything Bagel Seasoning.

10. Bake in oven for about 20 to 30 mins at the lowest rack until a wooden skewer comes out clean.

11. Cool completely before slicing.

Ingredients

DRY INGREDIENTS

Coconut flour = 120 g / 1 cup

Whole Psyllium husk = 22 g / 2 1/2 tbsp (Ground until half its original volume then weigh it)

Baking powder = 13.5 g / 3 tsp

Salt = 1 tsp

WET INGREDIENTS

Whole eggs = 5 large or 6 medium

Apple cider vinegar = 30 ml / 2 tbsp.

Coconut or olive oil = 30 ml / 2 tbsp.

Boiling water = 240 ml / 1 cup

2 to 3 egg yolks (lightly beaten with fork) for brushing.

Everything Bagel Seasoning

White sesame seeds = 1 1/2 tbsp.

Black sesame seeds = 1 1/2 tsp

Onion flakes = 1 tsp

Garlic flakes = 1 tsp

Flaky sea salt = 1/2 tsp

(Mix all ingredients in a bowl)
