Cinnamon Pecan Yogurt Muffins

If you're looking for something quick and simple to whip up for Christmas, this is it! These cinnamon pecan yogurt muffins are so soft, fluffy, flavorful and incredibly delicious.

1.  For best results, weigh the ingredients with a digital scale.

2.  Preheat the oven to 340 F or 170 C.

3.  In a bowl, add all the dry ingredients (except the pecans) and mix until well combined.

4.  Add all the wet ingredients and whisk until well combined. The batter is quite thick.

5.  Finally, add the chopped roasted pecans and mix until well combined.

6.  I used 15 small and firm paper cups, but you can use anything suitable so the total servings would depend on what size of muffin cups you use.

7.  Fill until 3/4 high, spread evenly then top with 2 whole roasted pecans for each muffin.

8.  Bake at a lower rack for 15 to 20 minutes or until a toothpick comes out clean.

9. These muffins can be enjoyed warm with a soft, fluffy texture and lovely cinnamon flavor. They can be kept at room temperature for about 2 to 3 days if you have a cool and dry climate. Otherwise, it is better to refrigerate earlier for up to a week or freeze for up to 3 months.

DRY INGREDIENTS

Almond flour = 150 g (1 1/4 cups)

Coconut flour = 40 g (5 3/4 tbsp)

Other flour options: -

1. Solely almond flour = 330 g (2 3/4 cups)

2. Solely coconut flour = 83 g (2/3 cups)

Baking Powder = 12 g (3 tsp)

Baking Soda = 4 g (1 tsp)

Monk fruit = 80 g (1/3 cup + 1 tbsp) (This is mild to moderately sweet so you can increase according to your preference. You can also use any other keto friendly sweetener.)

Salt = 1/2 to 1 tsp (I used 1 tsp as it was just right for my taste)

Cinnamon powder = 12 g (3 tsp)

Chopped roasted pecans = 120 g (1 cup) (I reserved 30 pieces of whole roasted pecans for the topping)

WET INGREDIENTS

Coconut oil = 80 ml (1/3 cup) (OR any keto friendly oil including melted unsalted butter)

Whole large eggs = 4 (230 g)

Unsweetened plain Greek yogurt = 240 g (1 cup) (OR whipping cream / coconut cream)

Vanilla Extract = 5 ml (1 tsp)
