1. For best results, weigh the ingredients with a digital scale.

2. Pre-heat oven to 350F or 180C.

3. Use a spatula and mix all dry ingredients in a bowl until well combined.

4. Lightly beat the eggs with a fork then pour into the dry ingredients. Mix until well combined.

5. Pour the hot water in and mix evenly until a dough is formed.  

6. This recipe makes 2 x 9" thin crusts or 1 x 13" thick crust. So, if you are making a thin crust, just divide the dough into 2 portions.

7. Place dough on baking tray with parchment paper. Spread the dough with fingers outwards to form a round shape. You can also use 2 parchment paper and rolling pin to do this. Wet your hands for easy handling of the dough.

8. Prick holes on the dough with a fork to release air bubbles during baking.

9. Bake in oven at the lowest rack at 350F or 175C for about 15 mins or until browned. Then flip over and bake another 5 to 10mins.

10. Remove, brush with melted butter, spread with pizza sauce, top with mozzarella cheese and any of your choice of ingredients.

11. Bake for about 10 to 15 mins until the cheese is melted.

Ingredients

DRY INGREDIENTS FOR CRUST

Almond flour = 180 g (1 1/2 cups)  

Whole Psyllium husk = 18 g (2 tbsp) (Ground until half its original volume then weigh it)

Baking powder = 4 g (1 tsp)

Salt = 4 g (1 tsp)

Italian seasoning = 1 tbsp

WET INGREDIENTS FOR CRUST

Whole eggs = 2 medium

Melted butter = 60 ml (1/4 cup) (OR any keto friendly oil)

Hot or boiling water - 85 ml (5 1/2 tbsp)

INGREDIENTS FOR PIZZA SAUCE

Pure tomato puree = 100 g (7 tbsp)

Olive oil = 15 ml (1 tbsp)

Italian seasonings = 1 tbsp

Salt = 1 to 1 1/2 tsp

Black pepper = 1/2 tsp

(Note: Mix all ingredients together in a bowl)
