2-Minute Single/Small Servings Vanilla Cake

Single or small serving recipes are great for individuals living alone or those who are the only ones living low carb/keto in the family. They are also great for portion control or to satisfy any last-minute cravings without worrying about leftovers. When I published the video for this recipe 3 years ago, it was done together with the chocolate version. As I needed to have better quality pictures for my cookbook, I decided to remake this recipe but make them separately. Hence, the chocolate version will be published after this.

1.  It's important to you use the same set of measuring spoons for accuracy. This is one of the rare occasions where I will not use weight measurement as the amount is so small.

2.  Add all the dry ingredients into a bowl and mix until well combined. Then add all the wet ingredients and whisk until well combined. The batter is quite thick.

3.  In the video, I showed you 1 option using a greased 200 ml cup, but you can use any suitable mug or ramekin, too.  Option 2 uses a 5x5 inch glass baking dish, greased and lined with parchment paper.

4.  Transfer the batter into the cup or glass baking dish. Spread evenly.

5.  Microwave for 1 minute first and if necessary, microwave for another 1 minute with 30 seconds interval. Check doneness with a toothpick.

6.  Remove from microwave, garnish with fresh berries and dust with powdered sweetener. As an option, you can add some whipped cream on top of the cake then garnish with the fruits.

DRY INGREDIENTS

Coconut flour = 3 tbsp (OR Almond flour = 6 tbsp)

Baking powder = 1/2 tsp

Monk fruit = 3 to 4 tbsp

Salt = A pinch

WET INGREDIENTS

Eggs = 1 large whole egg (57 g)

Unsweetened almond milk or any keto friendly milk = 3 tbsp (1 tbsp if using almond flour)

Coconut oil or olive oil / melted butter = 2 tbsp (1 tbsp if using almond flour)

Vanilla extract = 1/2 tsp
