2-Min Marble Butter Cake
Who knew that a microwave oven can produce the best texture for butter cake? I discovered that when I made a 2-min butter cake a few months ago. I was pleasantly surprised on how well the cake rose and how incredibly soft, fluffy and moist it turned out. It was way better than the baked ones. So, this time, I made the marble butter cake version, and it turned out the same - sooooo good! Single or small serving recipes are great for individuals living alone or those who are the only ones living low carb/keto in the family. They are also great for portion control or to satisfy any last-minute cravings without worrying about leftovers.
1. Add all the dry ingredients (except the cocoa powder) into a small bowl and mix to combine. Then add all the wet ingredients (except the water) and whisk until well combined. The batter is quite thick.
2. Scoop 2 tbsp of the batter into another small bowl. Add the cocoa powder, water and mix to combine.
3. In the video, I used a 5x5 inch glass baking dish, greased and lined with parchment paper. Alternatively, you can use 2 small cups as shown in the video. You can also use any suitable mug or ramekin.
4. Transfer the balance of original batter into the glass baking dish or cup. Spread evenly. Scoop the chocolate batter onto the surface of the original batter and use a wooden skewer to create a marbling effect. As the surface of the cake is small, it is quite difficult to create a nice marbling effect unless you reduce the chocolate batter. Nevertheless, it still looks fine.
5. Microwave for 1 1/2 to 2 minutes. For the cup version, microwave 1 cup at a time for 1 minute. It is best to microwave with a 30-second interval to avoid any overflow. Check doneness with a toothpick.
6. Once ready, remove the dish, parchment paper and slice into 4 servings.
7. You can enjoy this cake warm. It is incredibly soft, fluffy, moist, flavorful and delicious. In fact, the texture is even better than the usual baked ones.
